tl;dr: Everest is a great Nepali + Indian restaurant with high quality dishes, great variety, spice level customization and reasonable prices.
Everest has been a local mainstay amongst one of my core friend groups for months at this point. Every time we go, the atmosphere and service are both comfy and professional. The food is always incredible, and for the price range it's hard to beat. They offer a wide range of dishes, and for each dish one can choose any spice level from 1 (very mild) to 10 (extra spicy). Having tried much of the menu at different spice levels here, I can confidently say that it's hard to go wrong with any choice.
We, as a group, typically dine in, but for this round I opted to do carryout through their online order system. Pictured is a bit over $60 (at time of writing, including 10% takeout tip) and includes three lunch specials and one appetizer. For this price point, I snagged the Chana Masala, Butter Chicken, and Nepali Traditional Khana Set (Vegetable) alongside an appetizer of Samosa Chaat, which is my personal favorite here. Each dish, alongside the accompanying Papadam, is packaged carefully so as to preserve the quality of the dishes and prevent spills (I had removed it from the containers containing liquid here, but each had been carefully covered with Saran Wrap).
Whether carry out or dine in, Everest is a great restaurant that I can fully recommend to anyone looking for some quality Nepali and Indian cuisine at a reasonable price.

Ordered takeout from this restaurant for the first time today. While it is in a strip shopping center in a rather small space they make their food do the talking!
I ordered two dishes that I had never tried before anywhere and was very pleased with the portion sizes, flavor, texture and packaging.
It's a bit far from my home in Raleigh, but it was worth the extra drive time.
